I installed a few expansion & stuff packs for Sims on the computer (Seasons, Apartment Life, University, H&M Fashion, Pets, Teen Style, and Open For Business) since they install over top of each other, you have to use certain disks to run the Sims. Is there a way I can make it to where I can choose the disk I want to use? If it makes a difference I have Double Deluxe.

   You must always play the game by putting in the disk that comes with the latest released expansion pack that you have installed. Since the latest released ep that you listed is Apartment Life, you must put the disk for the Apartment Life into the game to be able to play.

   you have to use the disk that has had the latest release, not the latest one you have installed. so in your case apartment life, and you always use disk one for game play
