If fondant pearls are able to freeze, then when do you apply the luster dust?

I know you can make edible pearls out of fondant. But when do you apply the luster dust? Before you freeze the pearls or when you are ready to use them?

I would say, when you are ready to use them.
Luster dust is water soluble, and when the fondant is defrosting, it may cause condensation and make weird patterns in your luster dust.
